Our tasting room is also a Pintxo Bar conceived and run by the Pallares brothers. Enrique and Felipe grew up in Ecuador. They spent their teenage years and early twenties traveling the world as professional polo players, living in Argentina, Spain, California and many other places before they settled on the Eastern Shore of Maryland, where they started Casa Carmen, a boutique winery producing small lot craft wines.
Though in some ways it would sound as if they have lived many different “lives,” they really have spent most of their time in bars and around kitchen tables.
Inspired by the bars and bodegas of Spain and South America, the Pallares brothers have created a bar and menu that reflect a food-and-wine-obsessed culture with community at its center.
Similar to our winemaking philosophy, our approach to food is simple: be single-mindedly focused on quality. We use only the very best ingredients we can find and are uncompromising about this. Our sources are small production farms that use responsible practices to bring a different level of product to the table.
The menu of our Pintxo Bar is primarily based on local produce, premium Iberian tinned fish from boutique canneries, and small production charcuterie and cheeses.
All we do is forage the world of food and farms to find amazing ingredients and put them together in the best way we can, and hope that you like the results as much as we do.
